Thai Green Curry Paste (Vegetarian)
Preparation time: 10 minutes
Yield: 2-4 servings
Ingredients
- 5-10 small green chili (depending on how spicy you want it)
- 1 teaspoon of salt
- ½ green bell pepper, chopped
- 3 garlic cloves, whole
- 3 shallots, whole
- 1 teaspoon of kaffir lime rind
- ½ teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon coriander seed
- 2-3 coriander roots, chopped
- 1 tablespoon of galangal, chopped
- 1 tablespoon of lemongrass, chopped
- 1 tablespoon of vegetarian black soybean paste
- ½ cup of water (If using a blender)
Instructions
- If using a pestle and mortar. Add the chilis and salt and grind until smooth, then begin adding all the other ingredients starting with the bell pepper, garlic, and shallots.
Grind these ingredients together and then add all the other ingredients and grind together one more time.
- If using a blender. Put all the ingredients, including the water, together into the blender and mix, ensuring everything has combined well and is smooth.
Tips
- If you don’t have galangal, you can use ½ tablespoon of ginger instead.
- The green curry paste can be kept for up to a week in an airtight container in the fridge or get cooking right away.
