Pad Thai (Vegetarian)
Pad Thai is a classic Thai dish. Vegetarian Pad Thai is made with rice noodles, fresh vegetables and herbs.
Preparation time: 20 minutes
Cooking time: 5-7 minutes
Yield: 2 servings
Ingredients
- fresh rice noodles (soak in water for 10-20 minutes)
- 2 tablespoons of vegetable oil
- 1 cup of tofu, cubed
- ½ bell pepper, thin strips
- ½ cup spring onion, chopped
- 1 shallot, diced
- 3 garlic cloves, finely chopped
- ½ teaspoon pepper
- 1 cup of bean sprouts
Pad Thai Sauce Ingredients
- ½ cup shallots, diced
- 4 tablespoons tamarind paste
- ¼ cup of water
- 2 tablespoons soy sauce
- 3 tablespoons palm sugar or brown sugar
- 1 tablespoon unsalted peanuts, crushed
- 2 teaspoons of red chili flakes,dried
To garnish
- 2 limes, wedges,
- 1 tablespoon unsalted peanuts, crushed
- ⅓ cup bean sprouts
How to make Pad Thai sauce
- In a small bowl, mix together the tamarind paste, soy sauce, palm sugar,unsalted peanuts,red chili flakes, water and shallots.
How to make Pad Thai
- In a large nonstick pan heat the vegetable oil over a medium-high heat. Then add the garlic, spring onion and cook until tender, approximately 2 minutes.
- Add the tofu, bell pepper, shallots and pepper. Cook for a further 2 minutes.
- Add the noodles to the Pad Thai sauce, stir until the noodles are completely covered in the sauce.
- Turn off the heat and mix in the bean sprouts, and spring onion.
Tips
Garnish with the 2 limes, peanuts and bean sprouts.
