Pad Thai (Vegetarian)

Pad Thai is a classic Thai dish.  Vegetarian Pad Thai is made with rice noodles, fresh vegetables and herbs.

 

Preparation time: 20 minutes

Cooking time: 5-7 minutes

Yield: 2 servings

 

Ingredients 

  • fresh rice noodles (soak in water for 10-20 minutes)
  • 2 tablespoons of vegetable oil
  • 1 cup of tofu, cubed
  • ½  bell pepper,  thin strips
  • ½  cup spring onion, chopped
  • 1 shallot, diced
  • 3 garlic cloves, finely chopped
  • ½ teaspoon pepper
  • 1 cup of bean sprouts

 

Pad Thai Sauce Ingredients

  • ½  cup shallots, diced
  • 4 tablespoons tamarind paste
  • ¼  cup of water
  • 2 tablespoons soy sauce
  • 3 tablespoons palm sugar or brown sugar
  • 1 tablespoon unsalted peanuts, crushed
  • 2 teaspoons of red chili flakes,dried 

 

To garnish

  • 2 limes, wedges, 
  • 1 tablespoon unsalted peanuts, crushed
  • ⅓ cup bean sprouts

How to make Pad Thai sauce 

  1. In a small bowl, mix together the tamarind paste, soy sauce, palm sugar,unsalted peanuts,red chili flakes, water and shallots. 

How to make Pad Thai

  1. In a large nonstick pan heat the vegetable oil over a medium-high heat. Then add the garlic, spring onion and cook until tender, approximately 2 minutes. 
  2. Add the tofu, bell pepper, shallots and pepper. Cook for a further 2 minutes. 
  3. Add the noodles to the Pad Thai sauce, stir until the noodles are completely covered in the sauce. 
  4. Turn off the heat and mix in the bean sprouts, and spring onion. 

 

Tips

Garnish with the 2 limes, peanuts and bean sprouts.
